Easy Peasy Bolognese Cheat

When you think of bolognese you imagine hours of the traditional stewing with veg and maybe wine but I have a recipe that I have been using for mince for decades and especially became useful for my Daughter Georgiana, as we found out the hard way that she is allergic to tinned or fresh tomatoes but for some reason, not tomato paste…

Ingredients

  • 500g Mince meat

  • 2 tbsp Tomato paste

  • 1 Stock cube

  • 2 tbsp of Tomato ketchup

  • Drizzle of Olive oil

  • 1 tsp Oregano (optional)

  • Parmesan and Cheddar Grated cheese, (as much as you like)

  • 200ml Water

  • 1 tsp Paprika (optional)

  • Pinch of salt

  • 400g Spaghetti

Method

  1. Put a large saucepan on a medium heat and add your drizzle of olive oil.

  2. Fry the mince, tomato paste and stock cube all at once and cook, stirring for 5 mins until the meat has browned.

  3. Add the ketchup and 200ml and bring to the boil, reduce to a gentle simmer and cover with a lid.

  4. When the Bolognese is nearly finished, cook the spaghetti as instructed on the pack.

  5. Once plated, add the grated cheese and oregano.

Tip

  • A teaspoon of paprika will add colour and give extra flavour but my fussy kids can taste it so I sometimes separate the bolognese into adult and kids pans when cooking.

  • I use tomato ketchup as it adds a bit of sweetness and acidity, as well as bringing out the flavour of the meat.

  • As a student I would have the leftover in a sandwich for brunch the following day as a warm filler…sooo yummmm!!!!!

  • My husband likes the mincemeat in a lettuce wrap, I will write this up another time…

This is the children’s favourite as it doesn’t have any bits.
