Greek Breakfast

When I have time, I love cooking for my family, breakfast especially. One of my wife’s favourites, Greek Breakfast in a Pitta. It is especially good with cooked runny eggs as the yolk can get absorbed by the ingredients and inside of the Pitta. Try it out..its very simple.

Servings 4

Ingredients

  • 1 tsp Oregano

  • 4 Pitta Bread, Brown or White, your choice

  • 8 Slices of Halloumi, 1cm thick

  • 4 Duck Eggs at Room temperature

  • 8 Slices of Smoked Bacon

  • Olive Oil

  • Salt and Pepper to Season

 

Instructions

Halloumi
Heat oil in a frying pan.
Place the Halloumi Slices in the pan and fry on a medium-high heat, if it is your first time cooking Halloumi, turn regularly until each side turn brown and a little bit crisp at the edges. Take out of the pan and rest on kitchen roll to absorb the oil.

Bacon
Pre-heat your grill to 400°F
Lay the slices of bacon out on the oven tray, place under the grill and let it cook for 5 minutes, depending on thickness. Use a fork or tongs to turn the bacon over. Cook for a further 3 to 5 minutes or until golden and crispy, and rest in on kitchen roll to absorb the oil.

Eggs
This should be cooked to your preference, however, I like ‘Sunny Side Up.’ Heat oil in pan over medium heat, you can either crack the egg onto a small plate and slide it off the plate into the pan as to prevent any broken ending up in the pan or crack the egg straight into the pan. Depends how confident you are. Lower the heat slightly and cover with a lid and leave for a few minutes. Keep checking and take off the heat when the white is set, remember to season.

Pitta
There are several ways you can cook Pitta Bread, my preference would be on the Barbeque, however that will be for another post. The simplest would be to toast it, however, I put it under the grill, 400°F, like the bacon until it slightly browns. If it puffs up like a puffer fish, totally normal. Once cooked, place on chopping board, rest a clean kitchen towel on the pitta to avoid burning your hands and with a sharp knife cut open the pitta along the leading edge. Don’t go all the way around, just halfway.

Once all of the above stages are complete stuff them into your Pitta. Per pitta I would layer as follows:

  • 2 slices of bacon at the bottom,

  • then one fried egg,

  • and 2 Halloumi at the top

  • don’t forget to sprinkle with Oregano.

Please remember not to season too much as you have the saltiness from the cooked Halloumi.

If you are feeling adventurous you could add a dash of  Hummus or Tzatziki.
