Lemony Spinach

This is my go-to quick side dish and has become a regular on our table.

We have it on mash potatoes or as a bed of veg under a steak, and even on burgers as a relish.  I will sometimes turn it into breakfast by excluding the lemon and just breaking some eggs for a super yum protein-packed start to the day.

Shopping List

  • Baby Leaf Spinach

  • Olive oil to drizzle

  • Juice of half a lemon

  • Chili flakes (optional)

  • Salt to taste

Let’s cook

  1. Everything goes in the frying pan on a medium heat for about 2 minutes or until it wilts. Serve warm or cold.
